Parkside Homes fundraiser meal raises $900 for chair project

Parkside Homes Luau FundraiserParkside Homes raised $900 during its luau fundraiser at the Hillsboro Farmers Market Thursday, July 21. “It was a hot, but well supported community event in the park,” said chef Rob Scott. “The heat did not keep the community from coming out to enjoy a festive evening.” Parkside has now raised $2,500, which will enable the facility to purchase about 100 folding chairs and racks to store them in.The chairs to be used for future community and resident events at Parkside. The menu included a 300-pound pig from the Burdick Meat Market; Jennifer Gaines, director of nursing, and her family smoked the pork for 17 hours. Sides included rice, macaroni salad, fresh fruit and Hawaiian sweet rolls prepared by the Parkside dining team. The next fundraiser will be a German buffet from 5-7 p.m. Aug. 26. Proceeds from that event will be used to purchase new lifts for the nursing department to assist residents that require the use of a lift. The goal is to raise $15,000, which will cover the costs of the lifts.
