Hillsboro Locker is having their open house from Feb. 5 to Feb. 9 and is inviting the public to see the business’s new face with floral arrangements and balloons welcoming customers.

The family which now owns and operates the Hillsboro Refridgerated Locker is Matt and Nikki Hiebert of Marion. They have three children: Franchesca, 9; Mattie, 6; and Morgan, 4.

The family began managing the locker last August; the final paperwork was completed Jan. 1.

“It has always been a dream of Matt’s,” said Hiebert, “and here we are.”

She said the children even participated in the preparation.

“They helped us paint, and they are around here quite a bit,” said Nikki.

The meat-processing business gets large orders from families, churches and other organizations,

“I sometimes wish they would call ahead, we want to be able to meet the demand, but with 50 pounds here and 75 pounds there, we get surprised,” she said.

But they also cater to smaller orders. A couple visiting from Oklahoma stopped by for some summer sausage and pork chops to take back with them.

Hiebert said the shop will be having regular weekly specials which will be announced on the sign in front of the business. Services will not change from what has been offered in the past.

“We just want to continue to offer more and better,” said Hiebert.

Working with the Hiebert’s is Jim May, Hillsboro, as butcher, and assistant, Vickie Box, from Florence.

A drawing will be offered for a free half of a hog Feb. 10. Hiebert encourages people to stop by, register, and see the business.
