On her way to McPherson, Rong Ling Ni discovered Hillsboro and liked it.

“It is a good place,” she said, “and 3,000 people can make a Chinese restaurant work.”

No stranger to the Chinese food business, Ling has been working in the field for eight years. She manages two other Chinese Buffet restaurants, in Kansas and Ohio.

The buffet will be open from 11 a.m. to noon as a luncheon buffet for $4.75 and an evening buffet from 5 to 8 p.m. for $6.75. She plans to have the restaurant open seven days a week.

The restaurant will be having traditional Chinese dishes such as chicken and broccoli, pepper steak, crab rangoon and other Chinese food. A menu will be offered in addition to the buffet, but no traditional American food will be offered.

Ling will be using cooks from New York City who specialize in Chinese food and hopes to use local people in other capacities.

The location at 117 S. Main is currently being remodeled and will have that special oriental atmosphere when finished.

The Chinese Buffet is scheduled to open the first part of November.
